INCREASE pH OF SUCROSE

Quicklime increases the pH of raw sugar juice from a natural acid level (pH 5.0 – 6.5) to a neutral pH of 7. The addition of lime serves to precipitate out impurities found in the sugar, resulting in a purer, cleaner final product. 200kg of lime is used per tonne of sugar beet.
